Dalmore has the oldest Highland stills and has the particularity of a very old still whose neck is cooled by circulation of water, which lightens the brandy of these heaviest elements. Some of these stills have been in operation since 1874 and have produced very balanced and incredibly complex single malt. the use of sherry casks of several varieties (Olorosso, Amorosso, Mathusalem ...) from the Bodega Byass in Andalusia, these barrels of exceptional quality, are assembled to give birth to the quintessence of the range. The Dalmore is one of the few distilleries to have been run by a woman between 1860 and 1866. When the MacKenzie family bought the distillery in 1866, they affixed the symbol of their clan - a deer head adorned with 12 horns which means " Royal "on his whiskey. In 1960, the distillery merged with the company Whyte & Mackay, founded by relatives of the MacKenzie. Coppery amber in color, The Dalmore 12 years old is very expressive on the nose, on the vegetal and malty side, it gradually reveals aromas of flowers and ripe fruit (peach and apricot) on the other side develops on brioche, orange marmalade and cocoa powder. The palate is balanced between sweetness and bitterness, it is supple with aromas of orange already present on the nose and lingers on the nut and delicately salty notes. The finish is long and herbaceous and ends with a persistent hint of salt.
